German-Style Braised Red Cabbage

Plant-Based Butter 1 Tbsp.
Red Onion, thinly sliced ½ cup
Red Cabbage, thinly sliced, core removed 2 cups
White Sugar 2 Tbsp.
Apple Cider Vinegar 1 Tbsp.
Sweet Apple Cider ½ cup
Caraway Seeds ½ tsp.
Sea Salt ½ tsp.

Caramelized Onions & Peppers

Olive Oil 2 tsp.
Garlic, minced 1 clove
Sweet Onion, peeled, 1/8” wedges 1 cup
Green Pepper, sliced 1 each
Sea Salt ¼ tsp.
Pepper ¼ tsp.

Method:

  1. For the German-Style Braised Red Cabbage, in a large skillet over medium-high heat, melt butter and add onions; sauté for 1-2 minutes or until soft. Reduce heat to medium-low and add cabbage; sauté for 4-5 minutes or until wilted. Add sugar, apple cider vinegar and sweet apple cider, stirring to combine. Season with caraway seeds and salt. Braise gently for 8-10 minutes, stirring occasionally, until tender and the liquid has been absorbed.
  2. For the Caramelized Onions & Peppers, in a skillet over medium heat, add oil, garlic and onion; sauté for 4-5 minutes, stirring occasionally, or until onions begin to brown. Add green pepper; sauté for 3-4 minutes or until tender. Season with salt and pepper; keep warm.
  3. Grill the Caramelized Onion & Beer Bratwurst over medium flame for 6-7 minutes or until evenly browned with light grill marks.
  4. Toast buns as desired.
  5. To assemble, add a Bratwurst to each pretzel bun, slather with honey mustard and a heaping spoonful of the German-Style Braised Red Cabbage and Caramelized Onions & Peppers; serve with fries.
